Ingredients
1 head garlic
1 cup potatoes, cooked and peeled
1/4 cup plain lowfat yogurt
1/2 cup steamed cauliflower
1 small peeled green zucchini
1/2 tsp lemon juice
1 tbsp extra virgin olive oil
To make
01. Wrap 1 head of garlic in foil and roast at 350°F for 30 minutes.
02. Remove and squeeze out garlic flesh.
03. Mash 1 cup peeled, cooked potatoes.
o4. Add 1/4 cup lowfat plain yogurt and 1/4 cup pureed cauliflower and zuchini mixture (blend 1/2 cup steamed cauliflower, 1 small peeled green zucchini and 1/2 tsp lemon juice).
05. Mix garlic and 1 tbsp extra-virgin olive oil into potatoes.
