Feta-Spinach Salmon Roast

Ingredients
3 oz cream cheese, softened
3/4 cup crumbled feta
2 scallions, thinly sliced, including the crisp part of the green
1/2 cup fresh spinach, chopped
2 skinless salmon fillets of roughly equal size and shape, totaling 3/4 pound
Olive Oil

Directions
1. Preheat oven to 350 F.

2. Combine the cream cheese and feta, mashing and stirring with a fork until well blended.  Add the scallions and spinach.  Combine well.

3. Spread the mixture evenly over one salmon fillet. (The filling will be abou5 3/4 inch thick).  Top with the second salmon fillet.  Brush both sides with olive oil, turning the whole thing over carefully with a spatula.

4. Place the loaf on a shallow baking pan, and bake for 20 minutes.  Slice carefully with a sharp, serrated knife.

3-Step Cheesecake

Ingredients
3 pkgs (8 oz each) cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla
3 eggs
1/3 cup graham cracker crumbs
1 1/2 cups strawberry slices or assorted fruit

1. Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended.  Add eggs; mix just until blended.  Do not over beat after adding eggs.  Spray 9 inch pie plate with no stick cooking spray; sprinkle bottom wtih crumbs.

2. Pour cream cheese mixture into prepared pie plate.

3. Bake at 325 F for 45 minutes or until center is almost set.  Cool.  Refrigerate 3 hours or overnight.  Top with fruit.

Mom’s holiday cream cheese cookies

Ingredients

  • 1/2 cup butter
  • 1 1/2 oz cream cheese
  • 1/4 cup sugar
  • 1/2 tsp vanilla
  • 1 cup flour

Cream butter, cream cheese, sugar and vanilla.  Slowly add flour.  Fill batter into cookie press and press directly onto baking sheet.

Bake at 375 degrees for 8-10 minutes.
