Pate Brisee

Ingredients
2 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon sugar
1/2 lb (2 sticks) cold unsalted butter
1/2 cup ice water

1. Place flour, salt and sugar in a food processor and process a few seconds to combine.  Add butter; process until mixture resembles coarse meal, about 10 seconds.

2. Add ice water in a slow steady stream through the feed tube with machine running, just until the dough holds together.  Do not process for more than 30 seconds.

3. Turn dough out onto a piece of plastic wrap and flatten into a circle.  Wrap and chill for at least one hour.

Florentine Dinner Pie

Ingredients

  • 1 pre-made 9 inch frozen pie shell
  • 1 tablespoon butter
  • 1/2 cup finely chopped onions
  • 1 pkg (10 oz) frozen chopped spinach
  • 1 cup grated swiss cheese
  • 3 eggs
  • 1 1/3 cup half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground nutmeg

Directions
Bake pie shell in preheated 375 oven until lightly browned, about 8-10 mninutes; allow to cool at room temperature 5 minutes. Heat butter in skillet over medium heat; add onions and saute until softened, about 5 minutes; spoon into bottom of baked pie shell.

Cook spinach according to package directions; drain well squeezing out excess moisture. Arrange spinach evenly over onions in pie shell; sprinkle cheese over spinach. In small bowl, whisk together eggs, half and half, salt, pepper and nutmeg; pour evenly over spinach mixture.

Bake pie in preheated 375 degree oven until firm to the touch and a knife inserted in the center comes out clean, about 30-40 minutes. Allow pie to sit 15 minutes before cuttin into 6-8 slices.
